With varying levels of restrictions happening around the country we thought it was a great idea to share some more recipes with you.
These caramelised onion, olive & Goats cheese pastries are delicious and pair fantastically with our Ballerina Canopy 2018 Chardonnay.
Anissa's hot tip is to use our Limited Release 2018 Vintage Touriga to deglaze the pan with the onions. Yum!
3 sheets of puff pastry
1 & 1/2 large brown onions, sliced thinly
3/4 cup Kalamata olives, pitted & chopped
Sprig of fresh thyme
1 tablespoon olive oil
Splash of Gapsted wine (Limited Release 2018 Vintage Touriga)
100g Milawa Goat’s cheese
1/4 cup parsley, finely chopped
Pre heat oven to 200 degrees Celsius.
Line a flat oven tray with baking paper.
Cut each sheet of puff pastry into quarters, ending up with 12 squares. Using a fork score the pastry as per photo. Place onto oven trays. Place into hot oven for 10 minutes or until ALMOST golden. This process makes sure the pastry under the topping is cooked.
To make topping: in a frypan, add olive oil & heat, then add sliced onion. Add picked thyme. Cook on medium heat, stirring constantly until onions are fully cooked, golden & translucent. Add olives & stir through. Pour in the splash of Gapsted wine (Limited Release 2018 Vintage Touriga) to deglaze the pan.
Place a large spoonful of topping onto each square. Crumble goats cheese evenly over each square.
Place back into oven for 5 minutes to melt the goats cheese.
Sprinkle with fresh parsley & serve
