Cabernet Sauvignon is a variety that can age gracefully for decades and features in many of Australia’s most successful wines. Originating in the Gironde in south west France, Cabernet Sauvignon is a cross between Cabernet Franc and Sauvignon Blanc. The small round blue-black grapes yield a lot of fruit with medium sized leaves. Generally, a long maturation for 12-24 months helps soften Cabernet Sauvignons firm and structured tannins.
 
Cabernet Sauvignon is medium to full-bodied. Typical flavours are black current, blackberry, mulberry and cedar.

Ballerina Canopy 2016 Cabernet Sauvignon
From the Yarra Valley, this wine displays ripe red currant aromas with hints of spicy cinnamon and earthy beetroot. These aromas lead to a rich, full flavoured palate brimming with cassis and blackcurrant fruit, delivering a luscious, velvety mocha finish. This complex Cabernet can be enjoyed now or will reward patient cellaring until at least 2029.

High Country 2018 Cabernet Sauvignon
From the King Valley, this wine displays a deep red colour and aromas of blackcurrant, cassis and hints of liquorice. These aromas lead to a palate that is impressively balanced, with spicy cinnamon, cedary notes and textured grainy tannins and finishes long and smooth.

Tobacco Road 2018 Cabernet Sauvignon
From the King Valley, this wine displays a crimson colour with a nose of blackberry, ripe plum and violet aromas. A fresh yet complex palate, alive with rich fruit flavours enhanced by balanced oak complexity from partial maturation in French oak barrels. These rich fruit flavours show distinctive spice notes, the tannins are fine grained and subtle while the finish has a lovely suppleness.

Hidden Story 2018 Cabernet Sauvignon
This Victorian wine is dark crimson with purple hues, a sign of its youth. The nose displays rich blackberry, blackcurrant and violet aromas. These aromas lead to a palate of wonderful balance, brimming with rich bursts of fruit, fine silky tannins and a smooth finish. This wine will benefit from medium term ageing - up to five years from vintage.
