To celebrate the launch of our first ONLINE SHED SALE Anissa has create a delicious party favourite or Friday night snack using left over mash potato & the common pantry staple, tuna!

Tuna & caper croquettes
1 cup leftover mashed potatoes
1 x tinned tuna, drained (use small for a subtle flavour, large for a more defined fish flavour)
1 teaspoon capers, chopped
1 teaspoon lemon rind, grated
1 egg, beaten
1/4 cup fresh green herbs, chopped (parsley, dill or sage all work well)
1/4 cup Parmesan, grated
1-2 tablespoons plain flour (just enough to bind everything)
Salt & pepper
Ingredients for coating:
2x eggs, beaten
Vegetable oil for deep frying
Mix everything together in a bowl, except ingredients for coating & oil.
Roll small sausage shapes & place on a plate that will fit into the freezer.
Continue until all mix is in sausage form.
Place into freezer for at least 15 minutes. This makes handling the croquettes much easier.
Preheat oil in a deep saucepan to around 180 degrees.
To coat each croquette, place flour into a shallow bowl, beaten eggs into another bowl & Panko crumbs into a third.
One by one, roll croquettes through flour first, egg second & finish in the crumbs, shaking off any excess coating at each step.
Deep fry a few croquettes at a time, removing from the oil once golden brown.
Drain on absorbent kitchen paper.
Best eaten immediately.
