We took the opportunity to sit down with senior winemaker Toni Pla Bou to ask him a few questions...
What do you think is unique about this Sauvignon Blanc?
The grapes are harvested from a vineyard at 600 metres ASL, and so it’s a very late picked Sauvignon Blanc: mid to late March!
As a result you get excellent flavour development and a sensational wine.
Reflecting on the harvest, did it start any earlier this year, was the hang time normal, weather was optimal?
It was an odd year! It was very hot in January, and I expected the grapes to be picked early and the resultant wines to be ripe, low acid and generous.
However, paradoxically the wines are like those from a very cool vintage; tight, intense and bursting with flavour. Wonderful vintage!!!
What are some of your favourite food groups to pair with a variety such as Sauvignon Blanc?
Some of my favourite foods to pair with Sauvignon Blanc are freshly shucked oysters, Red Emperor en papillote or spicy Thai Salad!
What other wines are exciting you at the moment?
The inaugural release of our Limited Release 2019 Pinot Blanc.
