We've released our divine 2021 Limited Release Fiano just in time for all your Christmas celebrations! This Italian variety is lovely to drink on its own or paired with fresh seafood or spicy Asian dishes. It will be gracing many a Gapsted Wines staff Christmas table, already becoming a firm favourite.
Wine journalist Dan Traucki recently described our 2021 Limited Release Fiano as having a "...vibrant, complex bouquet including a hint of guava, great texture & depth on the palate with heaps of citrus & stone fruit flavours + a smidge of herbs. OUTSTANDING & EVER SO DRINKABLE!!"
And here's what senior winemaker Michael Cope-Williams has to say about producing this interesting emerging varietal.
"Our 2021 Fiano came off John and Helen Cavedon’s picturesque King Valley vineyard, just a couple kilometres Northeast of the Whitfield lookout and close to Whitfield itself. The rows run East-West but are shaded from the warm afternoon sun by a well-positioned hill. By any measure, it is a cool vineyard that produces incredibly intense flavours, especially in years like 2021.
We picked and pressed the fruit in the cool of the night and fermented it on 80% of its solids. That is, the sediment that is usually removed was included in the ferment. This approach gave the wine a whole new set of flavours, rich in thiols and zesty citrus notes. We left it sitting on its lees after ferment for another couple of months to integrate the flavours and maximise the antioxidant properties of the autolysing yeast. The result is all the traditional honey, grapefruit, floral and spice notes, backed up with racy wild ferment flavours giving a much more interesting wine."
