“Saperavi is rare enough in itself; sparkling saperavi is another level altogether. It’s fruity but dry. Or at least, it feels dry, even as sweet liqueured fruit rolls through. It’s buoyant and generous but it still manages to feel tannic, though the fruit keeps the momentum up. It’s not half bad. It’ll be interesting to see how it matures.” - Campbell Mattinson, The Wine Front
"Very deep, dense purple/red colour, with a vigorous froth of bubbles. The bouquet is meaty, blackberry and primal, with a certain rawness beyond primary fruit. It’s similar in the mouth: bold and new, bright and fruity, with a note of Mum's mulberry jam. The palate is full and not-too-sweet, the finish cleansed by well-judged tannins and harmonious acidity." - Huon Hooke, The Real Review

THE WINE: A truly unique sparkling red and the first of its kind in Australia. This wine displays a deep crimson colour. The nose shows complex aromas of liquorice, spicy plum and clove. These aromas lead to a palate of lovely depth and intensity, with complex cedary oak and fleshy black cherry finish.
FOOD MATCHES: Excellent with traditional roast turkey, also a truly luxurious aperitif.
