TASTING NOTES AT TIME OF BOTTLING

VINEYARD REGION: Alpine Valleys, King Valley and Barossa Valley

THE WINE: This wine displays a deep, inky red colour. The nose shows intense spices, vanilla, raisins, fruit cake and blood plums. These aromas deliver intense spicy ripe plum fruit characters integrated with complex toasty vanillin oak. Weighty and robust yet harmonious tannins.

Following fermentation, the wine was racked into new and one year old American and French Oak barrels. The wine was left in barrel for 30 months to provide oak tannins to balance the firmer grape tannins.

Although this may seem a lot of oak the evidence is in the softness of the resultant wine, fresh with the vibrancy of the fruit which dominates the nose and palate. The oak plays a supporting role, creating complexity and added mouth feel.

FOOD MATCHES: Excellent with beef cheeks, roasted parsnip and watercress.
